Benedictine Sandwiches
Ingredients:
- 1 cucumber (peeled, seeded, and finely grated)
- 8 oz cream cheese (softened)
- 1–2 tbsp mayonnaise (optional)
- 1 tbsp grated or finely minced onion
- 1/4 tsp salt
- Dash of black pepper
- Green food coloring (optional)
- Thin sandwich bread (white or rye)
Instructions:
- Grate the cucumber and squeeze out excess liquid using a paper towel or cheesecloth.
- In a bowl, mix the cream cheese, cucumber, onion, salt, and pepper.
- Add mayonnaise for a smoother texture, if desired.
- Mix in a drop of green food coloring for traditional appearance (optional).
- Spread the mixture onto sandwich bread and top with another slice.
- Trim crusts and cut into quarters or triangles for tea sandwiches.
Tip: Garnish with dill or parsley if serving at a party!
