Benedictine Sandwiches Recipe

Benedictine Sandwiches

Ingredients:

  • 1 cucumber (peeled, seeded, and finely grated)
  • 8 oz cream cheese (softened)
  • 1–2 tbsp mayonnaise (optional)
  • 1 tbsp grated or finely minced onion
  • 1/4 tsp salt
  • Dash of black pepper
  • Green food coloring (optional)
  • Thin sandwich bread (white or rye)

Instructions:

  1. Grate the cucumber and squeeze out excess liquid using a paper towel or cheesecloth.
  2. In a bowl, mix the cream cheese, cucumber, onion, salt, and pepper.
  3. Add mayonnaise for a smoother texture, if desired.
  4. Mix in a drop of green food coloring for traditional appearance (optional).
  5. Spread the mixture onto sandwich bread and top with another slice.
  6. Trim crusts and cut into quarters or triangles for tea sandwiches.

Tip: Garnish with dill or parsley if serving at a party!
